Overview
Seeking an experienced chef de partie to oversee a section of a busy kitchen, maintain high culinary standards, and contribute to menu execution and team development. The role combines hands-on cooking, station management, and collaboration with senior kitchen staff in a fast-paced environment.
Key Responsibilities
- Station Management: Run an assigned kitchen section independently, ensuring consistent food quality, timely plating, and correct portion control.
- Food Preparation & Cooking: Prepare, cook and finish dishes according to menus and recipes, maintaining presentation and taste consistency.
- Quality Control: Monitor ingredient quality, freshness and storage; perform regular checks to ensure hygiene and food safety standards are met.
- Menu Execution: Assist in implementing menu changes, specials and daily production plans; provide input on technique and ingredient usage.
- Order & Inventory Support: Assist with stock rotation, ingredient ordering recommendations and inventory checks to minimize waste and control costs.
- Teamwork & Supervision: Train, mentor and supervise junior cooks and commis; coordinate with other stations to ensure smooth service flow.
- Kitchen Operations: Maintain a clean, organized and safe workstation; follow standard operating procedures and comply with health and safety regulations.
- Service Pressure: Perform efficiently under high-volume service periods while maintaining composure and attention to detail.
- Cross-Functional Collaboration: Work closely with sous chef and head chef to meet service standards and execute special events or private functions when required.
Skills & Qualifications
- Experience: Proven experience as a chef de partie or similar role in a professional kitchen, with a strong track record in a fast-paced hospitality setting.
- Culinary Skills: Excellent knife skills, knowledge of cooking techniques, portion control, plating and food presentation.
- Food Safety: Strong understanding of food safety, HACCP principles and kitchen sanitation best practices.
- Leadership: Ability to supervise and coach junior team members, delegate tasks and maintain morale during service.
- Organizational Skills: Strong time management, multitasking ability and attention to detail.
- Communication: Clear, professional communication skills in Maltese (native-level) and the ability to work collaboratively with multilingual teams.
- Adaptability: Flexible, calm under pressure, and able to adapt to menu changes and varying service demands.
- Qualifications: Relevant culinary qualification preferred; formal training or apprenticeship and references demonstrating prior kitchen performance.
